Almost raw carrot cake

Who doesn’t love a big mug of hot tea or coffee along side a slice of carrot cake?? I love sweet treats and am always looking at how to create a healthier option to my favourite treats. This ‘almost raw carrot cake’ is loaded with protein, fibre & good fats so it’s a guilt free treat (at least that’s what I tell myself!).

Preparation
1. Firstly roast off your walnuts while you prepare all the other ingredients. Simply roast on a lined baking tray at 180 degrees for 10 minutes. You can leave the oven on as you will use it later :).

3. Once roasted pop all ingredients into a blender until you have a dough, press into a lined bread tin, coat with 1/4 cup of desiccated coconut by pushing the coconut into the dough.

4. Pop in the oven for 8-10 minutes until coconut is toasted, allow to cool, slice & enjoy!
Ingredients
* 2 1/2 cups of walnuts
* 1 cup dates
* 2 medium carrots, roughly chopped
* 1/2 cup of desiccated coconut
* 1/2 tsp cinnamon
* 1/2 tsp nutmeg
* To coat:
* 1/4 cup desiccated coconut
