The silly season is here and if you are anything like me- you will be eating everything in sight & using the line ‘ah sure- it’s christmas!’ so to keep you on track I recommend having some quick grab & go options at hand. This bircher couldn’t be easier & makes a delicious breakfast after a training session.

This recipe makes enough for 2-3 portions (depending on how hungry you are!) so you will get a few meals from it.

1. Place your oats, chia, vanilla & coconut water into a large lunch box which you can seal, pop in the fridge & leave over night.

2. Remove from fridge & stir in your coconut yoghurt.

3. Top with your favourite toppings- I went for berries, seeds & bee pollen.. so good!!
* 1 cup oats
* 2 tbsp chia seeds
* 1/2 tsp vanilla extract
* 3 heaped tbsp coconut yoghurt
* topping of your choice
