Crunchy chocolate cookies

These are an easy, crunchy healthy cookie so.. perfect for santa :P! They are super easy to whip up with all ingredients been thrown in the processor and the batch can be made in advance and frozen s if you have a spare 5 minutes prior to the ‘silly season’ kicking off get the hard work done so you can easily pop them in the oven as a healthy treat. These can be made vegan friendly by replacing the egg with a flax egg (1 tbsp flax seed to 3 tbsp of water). 1. Blend your cashew nuts and coconut oil until you have a smooth cashew butter.

2. Once smooth, pop in the rest of your ingredients and blend until you have a dough.

3. Roll your dough out into a cookie log, wrap in cling film and pop in the fridge to chill for 1 hour or up to 3 days before baking.Alternatively you can pop in the freezer at this point and bake at a later date.

4. Once chilled, slice dough into 2 cm thick cookies and press down with the palm of your hand.

5. Preheat your oven to 180 degrees and prepare a lined baking tray and bake for 10 minutes. Pop onto a cooling rack and enjoy with a hot chocolate, cup of tea or a red wine ;).
* Cashew butter;
* 2 cups raw cashew nuts
* 2 tbsp coconut oil
* 1/2 cup coconut sugar
* 1 egg
* 1/2 tsp vanilla essence
* 1 cup wholemeal flour
* 1/2 tsp baking powder
* 2 tbsp cocao
* pinch of pink salt
