Curried noodle soup

This quick and easy recipe is an easy go to for when you want a comforting healthy meal option. This is whipped up in ten minutes and is the perfect light yet comfort meal.  I used soba noodles but you can try it with rice noodles too and it will be just as good! Top with some salmon, white fish or chicken for some added protein.

This recipe feeds 2 people or 1 very hungry person (ME!!)

Preparation
1. Cook the noodles as per instructions on packet.

2. While the noodles cook saute the onion & garlic until soft, when they are soft add in the curry powder, tumeric powder, chilli, curry leaves, squeeze of lemon & a splash of water to create a paste. Now all in your additional water and coconut milk.

3. Allow to simmer until noodles are cooked, add in noodles and serve.

4. Sprinkle with some sesame seeds, drizzle of soy and some fresh coriander leaves.

5. Serve and enjoy!

Ingredients
* 90g noodles
* 1 spring onion, finely sliced
* 2 cloves of garlic, crushed
* 1/2 red chilli, finely sliced
* 1 tbsp of curry powder
* 1 tsp of tumeric
* 2-3 curry leaves
* 1/2 lemon
* 1 tbsp of soy sauce
* 1/4 cup coconut milk
* 2 cups of water or good quality vegetable stock
* To serve:
* sesame seeds
* fresh coriander
* or protein of your choice
