Nourishing noodle soup

This soup is so easy, super nourishing, light and absolutely delicious! This can be whipped up in 10 minutes and makes the perfect  light meal for the cooler nights in.

I spiralise the zuchinni (courgette) and carrot, if you don’t have a spiraliser simply take a potato peeler and grate lengthways until you have nice thin ribbons of veggies.

Preparation
1. Soak your rice noodles in boiling water until soft, you do not need to place them over heat simply allow them to sit in boiled water for 5-10 minutes until soft, strain, run through cold water and set aside.

2. Sautee your scallion, chilli, coriander stalks in a splash of coconut oil for 2-3 minutes.

3. Add in your soy paste, and water and stir until you have a well combined broth.

4. Add in your cooled rice noodles, zuchinni, carrot and soy.

5. Serve in deep bowl, sprinkle with your coriander leaves, add a wedge of lime to the side and enjoy!!

Ingredients
* 2 tbsp of soybean paste
* 2 litres of water
* 2 scallions, finely sliced
* 1/2 red chilli, finely sliced
* 1 handful of coriander, stems finely sliced & leaves pulled
* 100g of thick rice noodles
* 1 zuchinni, spiralised
* 1 carrot, spiralised
* 3 tbsp of soy sauce (and more to serve as you please)
* lime wedges, to serve
* coconut oil, to sautee
