Pad Thai- the ultimate fake away!

I had the biggest craving for Pad Thai all weekend and finally kicked it with this quick and easy homemade one. Rice noodles have to be one of the easiest things to work with and one of my favourite foods- I know they have basically no flavour but i love the soft texture (weird I know! :P).

I just used what veggies I had in the fridge but mix it up as you please, this is a veggie version but it would be delicious with some chicken or prawn added in there!

1. Soak your noodles in boiling water for 5-8 minutes, once they are soft strain and rinse with cold water.

2. While your noodles soak prepare your vegetables, shred your cabbage, crush your garlic, finely slice your scallion and make thin julienne strips of your carrots.

3. Grab a jar and mix together all your sauce ingredients.

4. Simply, pan fry your veggies for 3-4 minutes, you still want them to maintain a crunchy texture, once your veggies are cooked add in a splash of your sauce and toss though your noodles. Keep adding your sauce and tossing the noodles on the pan.

5. Once the noodles have heated through, serve, top with your crushed nuts, fresh coriander and bean sprouts.

6. Serve with a wedge of lime and enjoy!
* 200g of rice noodles
* 1 head of bok choi, finely shredded
* 1 carrot, cut into thin julienne strips
* 3 scallions, finely sliced
* 3 cloves of garlic, crushed
* For the sauce;
* 3 tbsp of gluten free soy sauce
* 3 tbsp of coconut sugar
* 3 tbsp of tomato paste
* 3 tbsp of rice wine vinegar
* 3 tbsp of lime juice
* To serve;
* handful of bean shoots
* handful crushed peanuts
* wedge of lime
* fresh coriander
* chilli flakes (if you fancy some spice!)
