Peanut protein cookies

These 4 ingredient cookies couldn’t be easier. They are an easy snack to kick the 3pm sweet cravings. Even though they are a healthy alternative to your standard cookie they are quiet fat heavy & contain sugar. Peanut butter is a high fat option but a good fat when taken in moderation, coconut sugar is an unrefined sweeter but reacts the same way as sugar to the body so all in moderation!

I used a cocao vegan protein in this recipe & it worked a treat, the cookies are a soft consistency & will hold for up to 3 days in an airtight container in the fridge. I have my friend Marc to thank for inspiring this recipe as I put a healthier & protein option twist onto his recipe so thanks Marc!

1. Combine all ingredients in a large mixing bowl. Mix for approximately 5 minutes until you form a moist 'dough' (how gross is the word moist!).

2. Spoon equal sized round dough balls onto a lined baking tray.

3. Lightly wet your fingers and press the dough down until you have a flat cookie shape.

4. Pop in the oven at bake at 180 degrees for 8-10 minutes (depending on how good your oven is!).

5. Pop on a wire tray to cool & enjoy!
* 3 heaped tbsp good quality chunky peanut butter
* 3 tbsp coconut sugar
* 1 tbsp vegan protein
* 1 egg
