Quick & easy vegan pancakes

Preparation
1. Pop all base ingredients into a blender, blitz until you have a smooth batter.

2. Using a non stick pan, add a small spoon of coconut oil and heat until melted.

3. Once melted add spoons of batter to your pan and cook for 2-3 minutes on each side until golden.

4. Serve with toppings of your choice and enjoy!
Ingredients
* 1 cup buckwheat flour
* 1/2 cup rice flour
* 1 cup water
* 1/2 cup coconut milk
* 1 banana
* 1 tbsp chia seeds
* 1 tsp of baking powder
* 1 tsp vanilla essence
* topping suggestions:
* -berry, coconut yoghurt & toasted seeds
* - dark chocolate & berries
* - berry coulis, toasted coconut & fresh fruit
* -lemon & coconut sugar
