Raspberry & coconut portion balls

I love a good bliss ball and have recently started adding some protein to them to help keep me fuller for longer and I’m loving it. I am using whole foods protein powder which is a pea based protein and vegan friendly so I’m loving it (I’m not vegan but a huge veggie fan!). I picked up the raspberry oil in the local health shop and love it as an addition to raw recipes.

These can be whipped up in 15 minutes from start to finish so pop net flick on the laptop and get blending :).

Preparation
1. Pop all base ingredients into a blender and blitz until you have a dough. Now add in your goji berries, cocoa nibs & raspberry oil and blitz for 10 seconds until combined, you still want some textured bits of goji & cocoa nibs through the balls.

2. Using the palms of your hand roll out even sized balls, coat through your additional desiccated coconut. Repeat process until all the mixture is gone. Pop into an airtight container and store in the fridge or freezer.

Ingredients
* Base ingredients:
* 2 cups raw cashews
* 1 cup dried dates
* 1/2 desiccated coconut & extra for coating
* 1/4 cup coconut water
* 2 heaped tbsp of protein powder
* Then add:
* 1/4 cup goji berries
* 1/4 cup cocoa nibs
* 1 tsp raspberry oil
