Raw Rainbow Salad

I figured ‘Rainbow salad’ was an appropriate name for this salad as it’s so colourful and fresh. This salad basically comprises of my fridge stable foods so is always a winner when there is limit stocks in the house.

This is a quick, easy and delicious recipe that is the perfect lunch box salad and will leave you feeling light, satisfied and healthy. I recommend some form of protein with it to keep you full, I enjoy some grilled white fish or panfried salmon fillet while himself enjoys some slices of roasted beef or a bakes chicken fillet.

1. Simply prepare all your vegetable as instructed above. To grate your courgette and carrot into long ribbons use a potato peeler.

2. Toss all your veggies together, add in your coriander and your drizzle of macademia oil and top with your toasted seeds.

3. Season with a little salt and pepper to your liking.
* 1 courgette, grated lengthways
* 1 carrot, grated lengthways
* 1 red radish, finely sliced
* 2 scallions, diagonally sliced
* Handful of fresh coriander, chopped
* 2 tbsp of toasted seeds, (recipe in salad section of le blog)
* Drizzle of macademia oil
* Salt & pepper, to season
