Roast vegetable & feta tartlet

This quick & easy tartlet is the perfect light lunch and can be whipped up in minutes. We had it for a group lunch when all I had in the fridge was veggies & it was delicious so I hope you like it as much!!

Size can be adjusted as you please as it’s based on your puff pastry lining really & how many hungry mouths you have to feed :).

We fed 6 hungry adults (thats questionable at times :P!) from the below.

Preparation
1. Line your baking tray (10in x 8in or size as you please but amend ingredients to suit) with baking paper & preheat oven to 180 degrees.

2. Slice your vegetables thinly.

3. Place your puff pastry in the baking tray and allow the edges to build up around the edges.

4. Mix your cream cheese & mustard, spoon over the base of the pastry until you have a nice covering on your pastry.

5. Layer your veggies on as you please, crumb your feta, sprinkle with olive oil & balsamic vinegar, session & pop in the oven.

6. Bake for 20-25 minutes until the pastry has puffed & veggies are golden.

7. Tear over your basil leaves, slice, serve & enjoy!
Ingredients
* 160g sheet of puff pastry
* 1 heaped tbsp of cream cheese
* 1 heaped tbsp of English mustard
* 1/2 red pepper, thinly sliced
* 2 tomatoes, thinly sliced
* 1/2 courgette, thinly sliced
* 1/2 aubergine, thinly sliced
* handful of feta, crumbed
* olive oil
* balsamic vinegar
* pink salt & pepper, to season
* fresh basil, to serve
