Roast vegetable & Freekeh salad

This salad is so tasty, loaded with veggies, flavour and one of the latest superfoods- freekeh, it is delicious served as a warm salad, as a main meal topped with a protein or as a side dish to any main meal with steamed white fish or chicken.

Freekeh is a grain which is cooked similarly to rice but is a high source of fibre, good source of protein and low GI so the perfect carb to add to your diet. It has a slight nutty flavour which I absolutely love!! Cook according to instructions on the packet and enjoy as a carb to any meal :).

Preparation
1. Add all your veggies to a deep non stick baking tray and coat in olive oil, add in your tin tomatoes, herbs, balsamic vinegar, salt & pepper and pop in the oven to roast for 40-45 minutes until veggies are soft and tomatoes have reduced (the tomatoes get absorbed into the veggies to create a really juice, flavorsome vegetable mix.)

2. While your veggies roast prepare your freekeh according to the packets instructions. For mine I done 1/2 cup of washed freekeh to 2 1/2 cups of boiling water and seasoning- bring the content to the boil, reduce and simmer with a lid on for 40 minutes, stirring occasionally.

3. Once your veggies are roasted and your freekeh is soft and delicious comibe all ingredients, serve in a large serving bowl and top with crumbed goats cheese, feta cheese or toasted seeds!
Ingredients
* 1/2 cup freekeh
* 1 small zuchinni, sliced
* 1 red capsicum, sliced
* 1 small white onion, sliced
* 1 small butternut squash, diced
* 2 cloves of garlic, crushed
* 1 tin of tomatoes
* 3 tbsp of balsamic vinegar
* 1 tbsp of mixed Italian herbs
* A few lugs of olive oil
* Pink salt & pepper to season
* To Serve;
* crumbed feta or crumbed goats cheese
* toasted seeds
* a protein of your choice
