Spinach & Feta stuffed Mushrooms

These little gems are so easy to make and make the perfect main meal or side for a veggie meal. I whipped these up for a number of guests at our recent yoga retreat in Bunker Bay and they absolutely loved them so it only seemed fare to share the recipe :P.

Super easy and quick these work perfectly as a brunch, lunch or dinner option.

Preparation
1. Preheat your oven to 180 degrees.

2. Pop your garlic, feta and spinach in your blender and blend for 30-45 seconds until you have a 'paste'.

3. Add a tablespoon full of your spinach-feta mix to the centre of each mushroom, drizzle with olive oil and season.

4. Place on a lined baking tray and bake for 20 minutes.

5. Serve and enjoy!
Ingredients
* 12 field mushrooms, stalks removed
* 100g goats cheese feta
* 1 handful spinach
* 1 clove of garlic
* Drizzle of olive oil
* Pink salt & pepper to season
