Super easy cauliflower & spinach curry

This quick curry is so easy to whip up, super tasty and nutritious so what’s not to love :P!!

A spicy, creamy curry loaded with iron, antioxidants and vegan friendly is my kind of meal and proved a crowd pleaser in my house, where.. a meal is not a meal without meat!!  This makes enough for 2-4 people, depending on appetite so if your cooing for 1 you will have plenty to tide you over for lunch tomorrow ;).

1. Pop your scallions, garlic, chilli, curry powder and tumeric into a blender and blend until you have a smooth paste, you may need a little water to bind it all.

2. On a medium non stick pan sautee your cauliflower until slightly golden, add in your curry paste and coat cauliflower.

3. Once the fragrances are released add in the coconut milk, reduce heat and allow to simmer for 10 minutes.

4. Serve & enjoy
* 1/2 head of cauliflower, cut into florets
* 3 scallions
* 3 cloves of garlic
* 1 red chilli
* 2 tbsp of curry powder
* 1 tbsp of tumeric
* 1/2 cup water
* 1 tin coconut milk
* 1 handful of spinach
* To serve;
* Small handful of fresh coriander
* Wedges of lime
