Tummy lovin soup!

My tummy has been acting up this week and anyone who knows me that me being unable to eat is a recipe for disaster :P.  I’ve been keeping meals light, natural and vegetarian the past 2 days to keep it light on the body and this soup today was whipped up from what I had in the fridge but was super tasty! Whipped up in ten minutes, nutritious, delicious and loaded with veggies it is the perfect soup for an upset belly or a light meal option.

Below is the base recipe for one person with veggie options, you can use what you have in the fridge or add in some rice noodles if you need more substance :).

Preparation
1. Saute your scallion and garlic in a little sesame oil until soft, add in your miso paste and a dash of water, stir until you have a rich miso liquid,

2. Add in your remaining water, chilli & soy and stir.

3. Now your cabbage, zuchinni noodles, roast squash and grated ginger.

4. Stir until your soup has heated up- this will only take 2-3 minutes over a gas stove.

5. Pop your soup in a bowl, top with fresh coriander and enjoy!

Ingredients
* 1 tbsp white miso paste
* 1 scallion, finely sliced
* 1 clove of garlic, crushed
* 2 cups of water
* 1 tbsp gluten free soy
* 1/2 tsp flaked chillis
* 1/2 tsp fresh grated ginger
* fresh coriander leaves, to serve
* veg options;
* handful of zuchinni noodles
* handful of shredded chinese cabbage
* spoon of roasted butternut squash
