Warm potato salad

This salad was a result of a ‘whats in the house for dinner’ moment. Potatoes are a staple in our house- classic Irish! And the rest is made up of fridge wonders. It’s super easy, quick and hits the spot- perfect for a dinner party or to have cold as a picnic offering- spring is upon us here in Perth so I am looking forward to picnic and al fresco dining again!! This recipe will feed 4-6 people as a side dish.

1. Boil your potatoes for 10-12 minutes until soft, then strain.

2. As the potatoes strain, grab a non stick pan and sautee your chorizo to release the oils, add in your onion and sautee for 2-3 minutes.

3. Next add in your tomatoes, few lugs of olive oil, salt and pepper and leave over medium heat for 3-4 minutes until tomatoes become soft and create a sauce.

4. Now add in your spinach & potatoes and toss through until well mixed.

5. Top with your pesto, serve and enjoy!
* 6 medium rooster potatoes, cut into even sized
* 2 whole tomatoes, diced
* 1/2 red onion, finely diced
* 2 cloves of garlic, crushed
* handful of spinach
* handful of sliced chorizo
* 4 tablespoons of pesto- homemade or a decent shop bought one
* Drizzle of olive oil
* Salt & pepper to season
