Wholemeal banana bread

I love banana bread and and always experimenting with recipes for it and this one is a clear winner- it is moist, full of flavour and super easy to whip up. This is a dairy free, refined sugar free option to your traditional banana bread so.. surely it’s ok to have an extra slice per serve 😛 (so I keep telling myself).

This does take some time in the oven but I just pottered around the house and done some cleaning while it baked.

Preparation
1. Preheat oven to 180 degrees and line a bread tin with parchment paper.

3. In a large mixing bowl mix together the coconut oil & honey. Then whisk in your eggs, & cinnamon.

4. In a seperate bowl mash your bananas and coconut milk together. Combine this with your egg mixture.

5. Fold through your flour and baking powder until you have a smooth batter. At this point add in your optional extras and mix through.

6. Fold your batter into your bread tin, pop in the oven and bake for 50-60 minutes until you can stick a skewer in the center and it comes out clean.

7. This is a super moist loaf so can be eaten as is or smothered in butter, a drizzle of honey or some marscapone cheese!
Ingredients
* 3 bananas
* 1/4 cup coconut oil, melted
* 1/2 cup of honey
* 1/4 cup non dairy milk (I used coconut)
* 2 eggs
* 2 cups of wholemeal spelt flour
* 1 tsp of baking powder
* 1 tsp of cinnamon
* pinch of salt
* Optionals;
* handful of crushed walnuts
* handful of chocolate chips
* handful of chopped dates
