Coconut & Berry Bircher

The silly season is here and if you are anything like me- you will be eating everything in sight & using the line ‘ah sure- it’s christmas!’ so to keep you on track I recommend having some quick grab & go options at hand. This bircher couldn’t be easier & makes a delicious breakfast after a training session.

This recipe makes enough for 2-3 portions (depending on how hungry you are!) so you will get a few meals from it.

These cookies are super easy to whip up, loaded with natural protein, low sugar and a delicious grab and go snack! Whipped up in less than 10 minutes they couldn’t be easier :). These cookies will last for up to 5 days in an airtight container in the fridge. I get 8 cookies from this batch :).

Raw truffles- that taste like ferrero rocher!

These were whipped up by accident but taste too delicious not to share this quick and east recipe. The secret behind the ferrero flavour is from the Mayvers cocao superseed spread so if you can’t find this use another cocao nut butter and please do let me know how you go and which one you used so others can try the same :).  These were whipped up in 5 minutes and will stay fresh in an airtight container in the fridge for up to 5 days.

Wholemeal banana bread

I love banana bread and and always experimenting with recipes for it and this one is a clear winner- it is moist, full of flavour and super easy to whip up. This is a dairy free, refined sugar free option to your traditional banana bread so.. surely it’s ok to have an extra slice per serve 😛 (so I keep telling myself).

This does take some time in the oven but I just pottered around the house and done some cleaning while it baked.

braised eggplant

Spiced braised egg plant (aubergine)

I love eggplant!! Such a tasty vegetable when cooked right and this quick braising method couldn’t be easier!! It will be done from start to finish in less than 15 minutes, is the perfect side dish to any meal, we had ours with some spiced pork and carrot salad tonight and it was delicious! It would be delicious with a fragrant steamed fish or baked chicken with a spicy yoghurt dressing.. (Which I may have for dinner tomorrow actually!). It would also be delicious as a main meal served with some fragrant cous cous and toasted seeds.

For this all the equipment you need is a chopping board, knife, desert spoon to measure, cup to measure and deep frying pan with a lid. Don’t hesitate to comment and let me know what you think!


Goji berry choco bites

Christmas is that time of year where we all tend to reach for the chocolate treats without a second thought… well I do anyway :P. This year I have the fridge loaded with healthier options and I am adamant I will avoid eating the 2 toblerones, 3 boxes of lindt chocolates and box of celebrations I have under the Christmas tree!!

This can be whipped up in 5 minutes, will hold in the fridge for up to 2 weeks and makes a great little gift for friends as a homemade treat option!


Sweet & spicy carrot dip

We have my friend Terri to thank for this recipe! It is so so delicious I had to ask her could I share it!! This is delicious as a dip with some crackers, spread on bread or if your like me.. eaten out of the bowl with a spoon… I’m that person :P.

Whipped up from start to finish in 20 minutes this is super easy to make but it does need a little love to make sure you don’t burn the veggies so I recommend sticking netflicks on the laptop and watching the pan while you catch up on your favourite series.. (us women are great at multitasking.. :P).
